Thunderbird has just updated. It immediately decided to go into some full screen mode that I had never seen before. How do I get it back into the windowed mode?

In Thunderbird, the top right three icons which minimise, maximise and close window. In a Mac, I believe this is done via the coloured buttons top left.

Full Screen Mode is an option invoked by an instruction your computer has been told to perform. You have probably pressed the keyboard buttons responsible for this.
