I am trying to send an evite to 287 individuals. I get an error message that there are non-ascii characters in the emails which are not yet supported. What does this mean and how do I fix it?

I am also getting an error message that there was an error saving my event to the calendar, but when I go back to find it, the event is on the calendar.

What exactly is an "evite"?

How are you addressing these 287 individuals? Thunderbird won't ordinarily allow that many discrete addresses when sending email, but I am not sure what limits apply in other cases.
