I have neither the menue bar for "file, edit, etc or the bar for "get mail, write, etc" . How can I get these back?

Pressing the alt key or F10 will reveal hidden toolbars in most applications including Thunderbird. Then select View-Toolbars and turn the missing toolbars back on.
