I try to connect to pop3.cogeco.ca to download my mail. I get a warning screen that says the security certificate is invalid because it points to another site. When I check into the details, it tells me that the certificate is issued to "pop.cogeco.ca" by GoDaddy.com

According to Cogeco support all my account and server connections are set correctly - and it's Thunderbird's problem>>>>

According to Cogeco, the incoming POP server is pop.cogeco.ca on port 995, SSL/TLS security, authentication = normal password, and User name = full email address.

So in your Thunderbird account settings you set the server name to pop3.cogeco.ca, and Cogeco support confirmed this is correct.

and it's Thunderbird's problem

I don't think so. Cogeco issued a cert for pop.cogeco.ca. That doesn't match with the server name in your account settings. This is what Thunderbird is complaining about. So to me it looks like they screwed up.
