If I pin a site - Gmail for instance - as an app tab, log into Gmail, then close Firefox, the next time I start Firefox the app tab will be there and I will automatically be signed in to Gmail. Is there a way to keep the app tabs from remembering passwords? I've already checked the Security options and turned off the 'Remember passwords for sites" setting.

Details to stay logged in are stored in cookies. When you sign into Gmail, on the login page de-select the setting "Stay signed in", that will stop Gmail from saving the cookie with the login details.

Thanks Tony but I can't de-select the "Stay signed in" option as I've never had it checked. I did try blocking cookies from mail.google.com but then gmail won't open.

This is actually a pretty important issue, Im surprised it hasnt gotten more attention. Especially as the most popular 'app' that would be tabbed is email, and its pretty shocking that Firefox just remembers that in plain text so that anyone on your browser can access your email.
