If sending out an e mail to say 4 friends...I am only able to add 3 names. I don't always want to make contact groups. Why can't I e mail for than 3 people at a time?

Exactly what "didn't work"?

Matt has given you the two answers I would have given and that I use frequently.

The address box starts with a default number of lines. Every time you press return it adds another line and if there isn't enough space, they scroll up. Look for the scroll bar. If you drag the horizontal divider bar down, you'll see more of the lines of addresses.

And you don't seem to have tried the Contacts Sidebar with its "Add to…" buttons and seen the scroll bar.
