How can I disable the new IM support in Thunderbird 102.x.x ?
I support Thunderbird in small business environments and IM is not a desirable/needed feature for now.

I really doubt you can. Although you might want to ask in the enterprise mailing list. What can be done with group policies is quite significant, as is what can be done with locking preferences.
Chat has been a part of Thunderbird for around 10 years though. Did you have it disabled before now?
