With Google, you can use www.google.<country code> for whatever country you want. For instance, if I wanted Australian Google, I would use www.google.com.au. If I wanted Canada, it would be www.google.ca.

The problem is when I enter google.com or google.ca the browser overrides my choice and goes to google.co.uk. I can't get to sites that are not co.uk

That sounds pretty weird. In the address bar, if I type in www.google.co.uk, I get the UK Google page. If I type www.google.ch, I get the Swiss Google page, and so on. Are you allowing or blocking cookies from Google? I am blocking them. What happens if you use a search plugin for whatever country you want? You can get those from mycroft.mozdev.org.
