I'm taking my laptop in for service. Should I uninstall/delete Firefox to keep repairmen out of my accounts and passwords?

Uninstalling Firefox won't help as that doesn't remove the profile folder. You would have to remove personal data stored in the Firefox profile folder. Make sure you keep a backup of important data.
You can use the button on the "Help -> More Troubleshooting Information" (about:support) page to go to the current Firefox profile folder or use the about:profiles page (Root directory).
