Návrat k předchozí verzi se dá přeinstalováním na předchozí verzi Thunderbirdu: http://ftp.mozilla.org/pub/thunderbird/releases/ Než něco spácháš, nezapomeň zálohovat!

Pokud jde jenom o vzhled, možná to půjde změnit v nabídce Zobrazení - Nástrojové lišty nebo Rozložení. Z dotazu není jasné, co chceš změnit.
