I had the IMAP server imap.one.com, and now I switched to IMAP server mail.madforest.com. On my laptop, also with Thunderbird(!), I just edited the account and it worked. I also successfully set it up on Spark on my phone.

But on my stationary computer, editing the account doesn't help. Thunderbird still connects to the old server. It claims to connect to the new server, but it doesn't; it never even asks for the password. If I enter a domain that doesn't exist instead, it gives an error message that it couldn't connect to imap.one.com (the old server). So it clearly does a check that the server exists, but then, if it exists, it connects to the old server anyway.

I then tried creating a new account from scratch, but it doesn't let me! It says that it failed to find the settings. (Why does it need to "find the settings"? I just entered them!)

Both machines have the same version of Thunderbird. The only difference is that the one that fails is on Win7, the other on Win10. I tried deleting my profile (completely) and it still fails in the same way.

I tried uninstalling Thunderbird and reinstalling it. At first it worked, but then it started failing again. It seems that the problem is that Thunderbird on this machine is convinced that this account is connected to imap.one.com. It finds those settings in the "Mozilla ISP Database".

I suggest you add the account offline to bypass the ISP database lookup. Select File/Offline/Work Offline, then File/New/Existing Mail Account, enter your credentials, then click Manual config. to enter the full details. It appears to me that madforest.com is hosted by Hetzner, and their instructions are here. After the account is set up, go back online by unchecking Work Offline.

If you still get routed to one.com, I would guess the DNS records for your domain haven't been updated. Perhaps a flushdns command on your computer will resolve it.

Thanks. I already managed to add the account (by clicking Advanced Settings), but it's the same result. I also tried flushdns.

The domain madforest.com is not hosted by Hetzner, it's hosted by Webhuset. But the mail service is now on another server, not Webhuset's. It's 95.216.162.34. The DNS records were updated yesterday (after some time), and after that I have been able to make it work in Thunderbird on another computer, and in Spark on my phone. https://who.is/dns/mail.madforest.com So I have no idea why Thunderbird on THIS computer isn't following that, or even more importantly, why it isn't just following what I enter.

Try adding the account in a new profile, in case the old one has a buried setting with one.com (search Config. editor for one.com). Help/Troubleshooting, about:profiles, to create a new profile. If that doesn't work, it suggests the problem is with the operating system or modem/router (a router reboot might help).

I already did that. Completely uninstalled and reinstalled (mentioned above). I haven't tried router reboot yet.

I rebooted the router to no avail. What in my operating system could be affecting a clean install of Thunderbird? This really seems like some weird bug with Thunderbird. But it's mysterious why it's working on another machine. In any case, I tried using the IP instead of the server name, and then it worked. I guess I will have to keep it like that on this machine.

If you just uninstalled the program and re-installed, that doesn't affect the profile folder, which is stored in a separate location. Create a new profile; the old one is unaffected.

The IP 95.216.162.34 is registered with Hetzner. If it worked with the IP instead of the server name, that's often necessary when connecting through a VPN.

No, I also deleted all profiles. I am not connecting through a VPN. Where are you finding that the IP is registered with Hetzner? Edit: I see that the IP is registered with Hetzner. However, the domain madforest.com is not.
