My pop account changed to an Exchange account recently. How do I configure TB to store my messages in the global Inbox?

You don't is the short answer, the global inbox only works with POP accounts. This is a limitation imposed by the fact that IMAP and Exchange accounts are synchronized to the server so must be in folder structures to allow that. (the server folders and the local folders and their content have to match.)
