You are going to find that most help files match the original toolbar layout. Some designer decided to hide those and add the AppMenu button. Square with 3 lines. Not only that but they moved the choices around and modified the names. Not their finest hour. I suggest that you turn the old toolbars back on. Pressing the alt key or F10 will make the menu bar appear. Select View-Toolbars and turn the toolbars back on. You have to do this in each window.

To get to where you are looking for with the AppMenu button you go to New Message-New Mail Account. Are you sure you want new mail account? This is where you purchase an account from a Thunderbird partner. If you already have an account established with an email provider you use Existing Mail Account.
