How do I back up the emails in my local folders to another hard drive, so that I won't lose them if my C: drive crashes?

Unless you've changed it, your profile and accounts are at c:\users\(yourID)\appdata\roaming\thunderbird. Copy that enter folder and subfolders to another drive and you will have a full backup that can be easily restored. On your second question, they can be exported to another format for viewing. No, they are not encrypted. There is an addon called importexporttools that can assist in that.
