I don't like the zoom effect when I pinch on the touchpad and I would like to disable. I already tried editing the flags "browser.gesture.pinch.in/out", but it doesn't change anything. I also don't want to disable it system-wise, since I use it in other applications.

I believe the preference you have referenced only works for Mac trackpads. I'm not sure that you can disable this function specifically for Firefox since I believe it's controlled by the operating system.

You can try changing the mousewheel.with_control.action preference to 0 and then restart Firefox. However, that will also prevent you from being able to zoom the page using the Ctrl + Mousewheel method.
