When writing an email, when I select recipients, it displays name and email in the "to" field. I only want the name to show; not the email address.

Sorry, it does not work that way. You need an address to get the message where it is going.

I understand it needs an address to go where it needs to, my problem is that in the "to" field, I only want name showing not the email address, b/c I don't want everyone seeing each others email addresses. In Outlook, when you click on am email name, it only displays the name in the "to" field; not the email address also.

Microsoft does a great job of fooling those that take things for face value and do not check how it really works. Unless you send using BCC instead of TO all email addresses are visible to the receiver. Yes even when using Outlook. Click on the TO button and change it to BCC.
