I've been using Thunderbird for the longest time, but recently two of my IMAP accounts are failing. I have three IMAP accounts connected in total, but the same two keep failing. Sometimes they work and sometimes they don't. When I startup Thunderbird, sometimes an error message says the following action was not successful and all of my IMAP folders for that account disappear. I then have to restart Thunderbird to get them back and then sometimes it fails again or the other account fails. I can't use POP3 because it doesn't show my folders for some reason, so I'm stuck with IMAP. Both of the failing accounts are outlook addresses. I've checked over my server settings and they both seem to be correct.

How can I fix this?

You aren't the only one reporting problems with Outlook.com/Hotmail. The fact that your messages do reappear indicates a problem on the server. Unfortunately the reason why this happens is unknown. And there is little which can be done as far as Thunderbird is concerned. Also no such problems have been reported with other email providers (may be except Yahoo IMAP, but that's already a while ago). So it's unlikely there is a general problem with Thunderbird IMAP.

Have you tried asking in a Microsoft forum? You may try turn on session logging in Thunderbird, perhaps this will give a clue. http://kb.mozillazine.org/Session_logging_for_mail/news#Using_Thunderbird
